Emergency five minute (GF) bread

If you get to the shops to find empty bread shelves and not even GF bread (which really a problem) here is a suggestion. I have not tried it myself yet and I will do the GF version. I still have some bread left but I would like to know if anyone else tries it and what they think.

Ingredients (serves 1)
40g self raising flour + 1 egg white + 25g margarine + Squeeze of lemon juice + 1/3 tsp sugar + 1/3 tsp baking powder

Method
Get a large mug and whisk the egg white until foamy. Add baking powder and lemon juice then mix. Add all of the other ingredients to the mug and mix until smooth and sticky

Microwave for 90 seconds. Slice and toast

If you have no eggs, it is not a problem. You can still make microwave bread simply by replacing the egg white with any of the following
  • 1 mashed ripe banana
  • 1 tbsp applesauce
  • 3 tbsp milk + 1 tbsp apple cider vinegar
To make the loaf gluten-free, simply use gluten-free flour instead of normal self raising flour.
To make the loaf dairy-free, use a suflower margarine.
